You know Italians are very passionate and attached to their food, and as an Italian who was born and raised in Italy, going on the Autoimmune Protocol AIP and having to stay away from all the dishes I grew up with was extremely hard challenge!
With these 13 AIP Italian Food Recipes from my cookbook bundle (which also includes a 10 Step Guide to Saving Time in the Kitchen on the Paleo AIP), I want to show that YES, you can keep enjoying the food that’s most dear to you!
You just need to learn about a few replacements and how to adjust your recipes to the new AIP ingredients you are going to use. And I can guarantee you, the result will be absolutely delicious, as you can probably already tell from this round up of beautiful and tasty AIP Italian food recipes that are shared below!!
All of the AIP Italian Food recipes that you see in this page are made without any potentially inflammatory ingredients such as: nuts, seeds, nightshades, dairy, gluten and grains. And all the savory ones are Whole 30 compliant as well!
My favorite ones are by far the Gnocchi (a unique recipe that I only shared in my cookbook) and the Cannoli. I hope you’ll have a chance to try them because I can assure you: they will blow your mind for how identical they taste to their original version!!

The AIP Italian Cookbook follows the structure of a typical Italian meal.
After the introductory “AIP Ingredient Guide”, there’s a chapter dedicated to Colazione or Breakfast. Since a real Italian breakfast is always sweet, in this book I recreated some of those dishes in a healthy, AIP version. Alternate them to savory breakfasts once every few days, when you just can’t tolerate anymore chicken liver!
Also, as you may know, in Italy we like to categorize our dishes into Primi (first courses) and Secondi (second courses). The former are usually carb based dishes, like risotto, pasta and pizza. The latter are usually protein based dishes, like fish and meats.
These second courses are generally accompanied by a Contorno (side) that is made with vegetables.
To end on a sweet note, at the end of every meal we like to enjoy a Dolce (dessert), and in the last chapter of my cookbook you’ll find plenty of those! And hopefully they will satisfy even your most fantasized cravings. Feel free to go in order or skip around.
