Egg Free Paleo Eggnog (AIP, Dairy Free)

I know eggnog is a typical Christmas drink, but the story of this particular egg free paleo eggnog actually comes from a tropical island where Christmas is not even a thing! As a matter of fact, this deliciously creamy drink was born in Koh Samui, Thailand, while I was on the elimination phase of the Autoimmune Protocol (AIP) and did not have may ingredients at my disposal to put together a dessert.

Since the hotel where I stayed used to hand make their coconut milk daily (I swear it wad the most delicious one I have ever tasted), at night, when Alec and I liked to enjoy the breeze on the terrace, I started asking the chef if he could make me a hot drink with it, blending it up without sugar with some of the other ingredients I was allowed to have (check out this post for a full list of foods allowed and not allowed on the AIP).

The result was very similar to what I like to call my egg free paleo eggnog, and it was so good that my husband starting ordering it too because it was better than any other regular drink that was listed on the menu!

As soon as I got back from that trip to Thailand, I starting trying to recreate that simple recipe in my kitchen. And with the addiction of a few spices and a touch of vanilla, this vacation favorite turned to be a perfect paleo and dairy free hot drink for the Holiday season too! And I am sure you are going to love it as much as we do!

Egg Free Paleo Eggnog

This creamy and frothy egg free paleo Eggnog is also gluten, sugar and dairy free and it's suitable for those on the Autoimmune Protocol (AIP)

Ingredients

Instructions

  • Combine full fat coconut milk, water, vanilla and rum in a sauce pan and bring to a boil.
  • Transfer the hot mixture in a high speed blender, add in all the other ingredients and blend until perfectly creamy and frothy.
  • Pour your egg free paleo eggnog in 2 glass cups and enjoy!
