Every time I look at my friend Casey-Lee Lyons’ Instagram Stories, she’s making some amazing paleo bread without yeast that makes me want to dive into my Iphone screen and grab a slice. And maybe use it to make some healthy unicorn toasts!
Today I invited to share her secretes (and recipe!!) with us, so that you can master the art of perfectly risen grain free paleo bread, that contains no yeast and is the perfect gut friendly replacement for those store bought loaves that contains lots of preservatives, sugar and bleached flours.
But first let me tell you a bit more about Casey-Lee! She’s from Brisbane, Australia and she’s the founder of Live Love Nourish, an amazing blog full of simple, wholesome recipes that are all free from gluten, sugar and dairy and many of them are paleo as well!

Now, back to our paleo bread without yeast. After seeing that all of the store bought gluten free breads – beside being quite pricey – still contained copious amounts of processed, refined, bleached flours, too much sugar, yeast and excessive salt and preservatives, Casey decided to create her own recipe for a paleo bread.
After testing lots of different combinations of flours, she landed on the perfect 5 ingredients that allow for a perfect fluffy loaf, free from yeast, grains and preservatives.
Garlic & Olive Paleo Bread Without Yeast from @LiveLoveNourishAus
- Pre-heat fan-forced oven to 180ºC.
- In a large mixing bowl whisk eggs. Add sparkling water and whisk to combine.
- Mix through garlic, herbs and olives.
- Add almond meal, tapioca flour, baking powder and salt and mix until well combined.
- Spoon batter into a lined loaf tin.
- Bake in oven for 45 minutes or until cooked through.
- Serve fresh, toasted, as a dipping bread to soup or simply on its own for a nourishing snack. You can enjoy this low carb, Paleo bread without yeast, for sandwiches, toasted, or make ahead and freeze in slices for healthy bread at your finger-tips.
