Pumpkin Oatmeal Porridge (Dairy & Gluten Free)

This creamy and delicious pumpkin oatmeal porridge features all the best flavors of the fall. Make sure you use certified gluten free oatmeal, or, if you can't tolerate it, switch it for rice flakes instead.

Ingredients

Toppings:

  • ½ Banana
  • 2 small Figs
  • 2 tbsp Coconut Yogurt
  • 6 Blueberries

Instructions

  • Combine gluten free oats and spices in a medium size sauce pan, add in the liquid ingredients and the pumpkin puree and mix well and cook over medium heat.
  • Cut the banana in small pieces, add in in the porridge and give it a stir.
  • Cook on medium for about 15 minutes, until all the liquid is absorbed and your gluten free pumpkin porridge becomes super creamy.
  • Transfer the porridge in a bowl, add all the toppings and enjoy1
